This is expected behavior from a wireless connection. You get the convenience of wireless but the downside is more inconsistency in the quality of the signal.
If you have not already done it change the channel width to 20mhz. This will cut your top speed and make it so you can't run 802.11ac but 20mhz running with no interference will outperform a 80mhz 802.11ac connection that has lots of interference. A single 20mhz channel can still run faster than most people internet connection.
Still no matter what you do you will likely get periods of time with random latency it is just one of those things in how wireless works.

That is the problem with wireless it can work fine one minute and then be unusable the next. It is affected by any number of things. It can be as simple as someone closing a door and changing the reflection patterns in the house.
