So I'm deciding at monitors I want to buy but also need to have an idea of what my graphics card will support.

My scenario, I'm a PC and console gamer, need two monitors and looking at buying two asus VG248QE monitors, one mainly PC, other for PC unless I have my console in use, yes I know consoles only output 60hz but I do use both monitors for PC a lot and want them to both be the same model on a dual monitor stand.

Will my single GTX 970 handle two of these monitors running at 1920x1080 at 144hz, I will only use one monitor for PC gaming anyway unless that changes in the future, but will want both monitors to be set to 144hz for my PC, then the second monitor will be connected to console over hdmi so refresh rates will auto change by port?

My Graphics Card -

Will my GPU be able to do this with no problems? Ask for more detail if needed

I haven't tried your scenario myself but I think since you gaming on 1 screen only it does not matter much for the performance much. 970 is great card for 1080p and if you compromise on AA and some ultra settings you will keep steady 90fps in all recent AAA titles.

Okay would it be okay running both monitors at 144hz at all times and only gaming in the one monitor though? The monitor is the Asus VG258QE... Would you think this monitor is good? The 60hz option would be the asus VN247H?

When it comes to gtx 970 personally I would rather stick with 60hz and bump up in-game details a bit.
That's where 970 belong to at 1080p.
Also for the saved bit of cash you could get nicer panel or invest in anything else for your system.
