I'm doing some troubleshooting and I'm going to try a different graphics card in my system. If I swap my 980ti for a 780ti are the drivers going to be compatible or do I need to DDU it?
Not compatible. Just delete the old ones completely first and then get new ones from the Nvidia website.
There are different drivers for the different generations, like 900series and 700series.

They do use the same driver - and I've owned both for what its worth. HOWEVER, there can be some complications if you do not first uninstall the old drivers. Not all the time, but I've had it happen. So I just use DDU to eliminate any possible issues.
Booting to BIOS? Drivers have nothing to do with that, so it will be fine.
Booting to Windows? It will work, and Windows will auto install the driver from the previous installation of Nvidia drivers. Highly recommend doing a DDU uninstall after you are done doing what you are doing.
