Found a really nice cheaper gaming PC build i intend to buy, and over time, make improvements on. I intend to play Skyrim on Ultra with graphics overhaul while recording. (YouTube channel - 200k subscribers! Hella!) Would this work or not?

It will definitely. I have i5 4th gen. (4670K) and it performs outstanding in all tasks.
Go for i5 without any doubt. i5 destroy any AMD CPU in gaming.
