These are the parts i picked together

Processor: Intel Core i5 4440 3.1 GHz LGA1150

Ram: Kingston HyperX FURY Black 8 GB DDR3 1600 MHz CL10

GPU: Asus STRIX-GTX960-DC2OC-4GD5 GeForce GTX 960 O.C. 4096 Mt

Motherboard: MSI H97 GAMING 3 Intel H97 LGA 1150 ATX

Storage: Seagate Barracuda 1 TB 64 MB 7200 RPM 3.5"

Case: NZXT S340 Mid Tower ATX

Hard drive: Asus DRW-24F1ST/BLK/G/AS 24x DVD+/-RW

Power supply: Corsair CX600W V2 CX-series 600 W ATX

Average price on this will end up on 900€

Ideally i would like to be able to play newer games/upcoming games with medium-high settings.

Is it fine if you cut out the SSD did some research on SSD's and seems like the only thing it really does is boot up os faster if you put in on the SSD wich i don't care much for. And how much better is the gtx 970 compared to the 960 since the price diffrence is quite big?

 
I would encourage you to get an SSD. Yes, the PC boots faster, but it also makes navigating the OS and installed programs much faster, as well as helping to reduce the time taken for file transfers, disk scanning and any other tasks that use the OS installation drive, of which there are plenty.

You go up a full tier in gaming settings. High settings w/ gtx960 will usually be ULTRA settings w/ gtx970.
