So I live in the country and have decent internet, but the ping is just terrible. So I went and bought a wireless PCI-e adapter and installed it to use my phone as a hotspot. So I installed it and downloaded all the needed drivers and everything is working fine, except when I connect to my phone it's still using my hard wired Lan? Like it says im fully connected to my phone's hotspot, but when I go to speedtest.net its using my Lan's IP and my ping is terrible. So I unplugged my Ethernet Cable and did a speed test and now my ping is great and everything is working fine. Plug the Ethernet Cable back in and then it's back to my Lan's IP while it still says i'm connected to my hotspot... Any help would be amazing since it would be nice to not have to unplug my Ethernet Cable all the time. Thanks!

That is normal behavior for any system I have used. The assumption is that wired is better than wireless. You can change the priority to try to get windows to use wireless -- http://www.addictivetips.com/windows-tips/give-ethernet-higher-priority-over-wifi-connection-in-windows-10/

Usually an Ethernet connection is faster, so the computer will try to take the faster connection first.
Here is how to change the priority:
