e5-2670 v3 or i7-5820k for music production?

I'm starting to plan a build for later this year and so far I know that I want two intel 750 ssd's in raid 0, a 4tb mushkin ssd (when they launch later this year), 128 gb corsair dominator platinum (64 gb will be a dedicated ramdisk for tracking if faster than the 750s), and a r9 390 for a little gaming @ 1080 or quadHD. I'm torn between a 12 core xeon which I can get for about 300 used on ebay or a six core 5820k which is about 400 new. Is the performance boost from more slower cores that noticeable in audio production?

I would recommend the Core i7 5820K (second one you mentioned for $400 new)
Reasons being:

1. Very compatible, the Xeon might not be compatible with your motherboard, if you send through the part number of your board I can check for you.

2. The Core i7 5820K slightly out performs the Xeon in single core performance. Which will probably run your music creation app better. (slightly)

3. The 5820K is new.

Honestly, they are both very good, and the difference is only slight.
