I'm about to buy this custom-made PC from iBuyPower (yes, I know it's extremely worth it to build your own, but I am on vacation and totally willing to pay a premium for them to make this and ship it to me by the time I get back) and I just want some opinions before I go through with it.

I'm going to be mainly recording/streaming/playing The Elder Scrolls and Fallout (Skyrim, Oblivion, Fallout 4 etc.) and I just need to make sure this build will be able to handle it.

The total is around $1,500. I'm willing to go up to $2,000 if I need any ESSENTIAL upgrades. Please let me know if anything seems out of the ordinary, as I am itching to place the order.

I would highly recommend getting a better video card for the money, going for a 980 or 980 ti, and downgrading the cpu to a 4790k or something similar, much better gaming performance and only slightly reduced video render times with an inferior cpu. Will give you a better experience by far in games.

I am familiar with their site and you need to actually select those free upgrades (you'll just notice there's no increase in price)
But 350W is not gonna do it...

Other than those it's a very solid build and I'm sure you'll be happy.

The only thing of note is that you could likely save a lot if you went with a socket 1151 motherboard and CPU.
The i5 6600K and i7 6700K are both very fast and would save you plenty. Plus the new socket type will allow for more upgrades in the future. The downside though is that they won't support quad channel memory. (only dual channel)

iBuyPower uses mediocre to downright horrible PSUs to begin with. 350W is way too little for the build with even the best you can get. You need at least a good quality 550W PSU.

Personally. I'd aviod iBuyPower and CyberPowerPC altogether. They are renowned on these forums for having poor quality unbalanced PCs that are overpriced, along with bad after sales support. I've seen way too many of them fail on these forums to recommend them. Go with a more trusted company like Digital Storm, Origin PC or Puget Systems. Sure, you may not get as many free add-ons but I think having a better build is the main goal at the end of the day.

That is true. Side note, everyone mentions the 350W PSU but from what I understand I get a "free upgrade" to a 700W PSU.

Alrighty, so I'll definitely get a better one, anything 700+ with something like Corsair I'm assuming? (total PC noob pretty much)

Other than that, any last opinions before I go through with the purchase? Thanks everyone, you've all been a huge help.

How about this one: 850 Watt - EVGA SuperNOVA 850 - 80 PLUS Bronze

Look out for EVGA's B2, GS, G2, P2. THose are the only ones worth buying from EVGA, along with anything from Seasonic or XFX.

Any of those will power a 5820K and a 970 with no problems, with some headroom for overclocking the GPU or CPU as well.
