Ping intermittent high response time

I have a server in a production environment where the response time should be <1ms, where it appears to be jumping up to 4-5ms and occasionally every few minutes or so it will have a one off ping of around 3000. It can vary a lot, but i'm not sure where to start, any help would be appreciated.

How have you set the server up? Wirelessly or with cables?

If wirelessly, is there only one router, or some access points?
Try changing the channel in router settings.

If with cables, (ethernet), could be faulty cables, or even faulty router.

Worth trying new hardware because it sounds faulty.

The server is not physical it's a VM - sorry should have mentioned that.

Now i'm not a genius in networking, however internal servers should not have a larger ping time than <1ms, right? - If it does then I would presume it generally means there is an issue somewhere.

If it's internal then it probably rules out a faulty router? however it could still be faulty cabling if it's happening to all the servers within that host, i'll take a look and let you know!
