Router / Wirless AP / File Sever / Plex server / Mail Server ???

So I just upgraded my core components, and wondering how I could have fun with the left over parts. I have an old LGA 1155 MB (asus not sure the model number), Core I3 cpu (3.3Ghz dual core), and 4gigs of ram. Nothing to get excited over.

Never really ran Linux, hope I put this question in the right thread, if not sorry. I was thinking about buying a few cheap parts to finish a second computer and trying my hands out on a few different ideas.

Not asking how, just if this can be done, but could I install Ubuntu server on this computer, use it as a router, firewall, use it as a wireless ap from a wireless pcie card, use it as a file storage server, run it as a plex server, and start my own mail server, all on one machine at the same time. Sorry for the ignorance of my question, but I've been a windows guy my whole life (38 years old) and looking to try something different.

I won't be setting this up on my main network, more or less just goofing around, using it as a learning experience.

So what do you all think, can all this be done one one machine? Can an old Sandy I3 handle all that? Ideas?

    Setting up router/wireless AP tskes a bit of technical knowledge of the commandline but yes ubuntu server or any other distrobution can handle all these tasks easily.
