So I have switched from Mac to PC (windows), but kept the wireless keyboard as I like typing on it and it's nice as well. My question is, is there any way to change what each key does? Not that I wouldn't be able to accomodate to the windows layout, but I prefer the Mac OS one as it makes more sense to me. (I even used windows before mac)

The layout on a Czech keyboard I use is this:

When there are 3 characters assigned to 1 key, it works the way that the bottom left is the default, the upper left is with shift and the bottom right is with alt. The ones with shift work the same, but the ones with alt type a different character which most of other windows keyboards have.

So is there any way to change which character will be typed when pressed with an alt key? Thank you.

Solution
Just open up the input selection in windows 8 or 10 and check the advanced input settings. You might be able to customize it.

Be warned though, the "Windows layout" is the actual, official key layout for your country/language, it's the mac one that was wrong. Learning to type without customizations will be a much better idea.
