Yeah, it's advised to keep one drive as your boot and application drive while all your data is stored onto a secondary drive. The primary drive can be either an SSD or a HDD but the SSD will maintain a solid performance in both reading and writing whereas the HDD will drop in performance over time as it is a mechanical drive.
For video editing, having the rendering duties off the SSD will net the best results while you save your content onto a large platter drive. Having a
RAID0 array with SSD's can be far more productive though it all boils down to what sort of a production setup you currently are planning out or intending to implement/upgrade to since this is all an investment per say and you can't have too much invested in this if your production level is entry/novice.
