Suggestions and Critique My Newest Build! (Editing / Gaming)

So let my start off with some background. My first two PC builds were strictly gaming builds so choices were a bit easier to make. This is going to be my first build for a dual purpose machine so I am really looking for some input.

This PC will mostly be used for editing/rendering as far as serious workload. I do a lot of racing and have tons of GoPro footage that I deal with (and my current rig with an i5 2500k is a nightmare!). The second purpose is gaming. I use a ps4 for most of my gaming (because my friends are lame and won't build their own PCs) but there are games I would rather play on a computer. Mostly racing games due to triple monitor setups, but some other games will include GTA, some open world stuff (Skyrim and sorts), not really into FPS. Lastly, this will also be my day to day browse the internet and all that (but I do have a work laptop that takes most of the beating on that front).

With all of that said here is my parts list: http://pcpartpicker.com/parts/partlist/

In a few years I hope to make a desk rig using most of these components. Included with the desk rig upgrade will be custom water cooling loops, SLI/crossfire (thus the 850W PSU), triple 1080p monitors, maybe another 32GB of memory. You get the picture.

Some components I need suggestions on are a monitor, mechanical hard drive, and case.

I am using a very old monitor at the moment and desperately need a 1080p model. I figure 60hz should be enough as higher rates are only beneficial in FPS games mostly.

Since GoPro files get large quickly, I need lots of space to store everything. I imagine a 2TB would be sufficient, just curious as to which brands are top notch these days?

And a case is always the hardest part for me. I am going with a minimalist setup (white/black/gray). I know, the gtx 970 has red but I'll paint that. Any suggestions on some good looking midtower cases with a decent sized side window? I currently have a Full Tower NZXT Phantom (primarily for my Noctua CPU cooler) but it is just a bit large for my liking these days.

Lastly, my budget (sans monitor) is to stay around $1500. No more than $1750. Sorry this was so long, thanks for all the help in advance!!!

And I only ever plan on doing 2-way SLI with this CPU so the extra lanes the 5930k offers won't be used.

Then what's the point of getting the i7-59XX series? Trust me, you're fine with a 5820K for $200 less. Sure, you lose 12 lanes, but who needs 40? No normal person uses 3-way/4-way SLI anyway. Another reason to go with the 5820K is that the 5930K is basically just a 5820K overclocked to 3.5 GHz with extra lanes, but Intel naively charges you $200 more. Therefore, the 5930K isn't even worth it. 28 PCI-E lanes are perfect for 2-way SLI's. Save your money. Get a 5820K.

I heard Xeons weren't really optimal for most gaming applications. If I were just building a workhorse I would definitely go that path. And I looked at the 5930k and just couldn't justify the price difference. I plan on OC'ing so the difference in clockspeed isn't notable. And I only ever plan on doing 2-way SLI with this CPU so the extra lanes the 5930k offers won't be used.

Yeah I went with the 5820K. Way more sensible. I just finished my build this weekend. Went with mostly everything I had on that list. Picked up an ASUS VN248H-P monitor for an open-box price on Newegg. Very nice. Running it 24/7 for a few days and then its time to see what I can get out of this 5820k. Lets hope the lottery was good to me.
