The Asus Sabertooth uses probably the more common of the two sockets, LGA2011 V3, rather than the less used FCLGA2011-3. It's essentially a different version of LGA2011, but they're not compatible. With the i7 5930 and 5820, you get slightly better price per performance, but they're both a little bit less powerful than the Xeon. Just because the LGA2011 socket is the most common and easily upgradable if you can find something better, I'd go with it. The two Intel CPUs also have the added bonus of being overclockable.

For the two Intel, one's got a bigger number than the other. 5930 is better than the 5820, just more expensive.

Other thing to note. I'd look into the i7 6700k. Nearly the same performance, better single core performance, about a year newer, higher clock speed, lower power consumption. Even has support for DDR4 because it's Skylake. Just food for thought. No need to go extreme with the 6 and 8 core Intel processors when a 4 core works perfectly fine with anything that you'll need it for.

Rendering and Editing 4K videos so I want more cores so the i7 isn't even in the picture

You'll want to go with the Xeon, then. The extra cores are going to make a large difference and the little extra power is going to go a long ways with 4k. Any Asus Sabertooth board that supports the chipset is going to be good.
