How much wattage do I actually need for my new build?

@Giodat, That's a nice build. 850 watts is sufficient for two 980 Ti's in SLI. Right now, there is a great deal on NewEgg for a EVGA P2 850:

Out of my own personal curiosity, are you planning on designating the Samsung 950 Pro as the OS drive, and the two 850 Pro's into a RAID 0 array for your steam library and data?
