3 sticks would run in triple channel mode (better that dual channel mode).
But for max compatibility they all must be same brand/model.

Yeah, I currently have 1 Corsair Vengeance LPX Red 8GB 2666MHz RAM stick.
It's about £50 for one stick and about £70 for 2, so was thinking of getting another 2 but wanted to make sure it was worth it, hence my initial query.
Since the board supports it I think I'll grab the 2, have 3 sticks in and if there are any issues I can just take one out til I can afford another
