While you would probably not notice a difference while gaming the Xeon would be better for video editing/rendering that can utilize the HT. Personally i'd go with the Xeon since it appears that newer games are recommending the i7's in gaming.

Make sure that you get the 64-bit version of Windows 10, if you only get the 32-bit version it will only read a maximum of 4gb RAM. Whichever build you decide to go with...

The Xeon processor likely is a bit better, the RAM speed doesn't really matter.

In regard of PSU mentioned below:
B2 better quality than G1? Maybe that's the case, I don't know, G have a better efficiency and I would had assumed it was better.
However I would had gotten G2 rather than G1 because G2 is the one which has tested fine, the G1 is a different model. Alternatives to G2 650 would be Corsair RM650x, EVGA P2 650 which doesn't cost much either and the CoolerMaster V650.

As for the HDD 1 TB HDD still give 8 times more space than a 120 GB for the money but neither of a 1 TB HDD or a 120 GB SSD give the most amount of room for the money. If I bought a HDD I would likely had bought one with more room for a cheaper $ / GB ratio but for a new build maybe I would had opted for a 250 GB SSD instead even on a budget but that depends totally if it will hold enough content for your purpose too.

Amazon sold the Sandisk Ultra II 480 GB for a decent price on black friday but that price would be like twice the price of a 1 TB HDD anyway.
Personally I haven't watched reviews of either the B2 or the G1 EVGA but I would had gotten the G2 over the G1 and would be skeptic about the B2 being a better one than the G1 but maybe it is.. But if so just avoid the G1 and get the G2 or P2 instead.

Thanks for replying. I thought the G1 would be good but I will change it for one of the PSUs you suggested.

Where are the prices from?
PCpartpicker:

$70: Seasonic SSR-650RM
$80: EVGA P2 650 !!!! THIS!!
$90: Corsair RM650x
$100: EVGA G2 650

I think the P2 650 kinda is an obvious choice ..
