Dual NVIDIA K1200 cards or just one NVIDIA M4000?

Which would be more optimal for an architectural 3d rendering machine? Although we'd prefer to construct our own machine, our firm is ordering a custom desktop. Curious as to if an i7 6700 or a Xeon E3-1270 v5 would be the best move for a processor as well. We plan to have 32 GB DDR4 RAM. Thanks so much.

If you're looking for rendering, the Xeon paired with ECC RAM is best. Especially given the Skylake chipsets known issue regarding calculation crunching.

As for the GPU, Always go with the higher single card. You can always add one more down the line if you need more power and the starting stack is 100% power, where SLI configurations lose some power and ability of the card right away.

EDIT: If you don't already have a vendor picked out, consider xicomputer.com They have a great reputation for custom Engineering based machines. Next best thing to building it yourself.
