I have 3 old SCSI HDDs (2 50 pin and one 80) formatted Mac OS ? (pre OS X) that I would like to recover but no longer own anything Apple. Is it possible using Win7 and my Dell DImension 2400? And, if so, what all would I need as far as adapters, cables, apps, etc?

Solution
for the 50 Pin you can get any old UltraWide 320 SCSI Card (Doesn't have to be RAID) and add it in the 2400 as long as the SCSI is PCI and NOT PCI-X or PCIe.

As for the 80 pin well that is a bit more difficult. You will either need an adapter like so http://www.amazon.com/SCA-80-PIN-SCSI-ADAPTER/dp/B0058V1UWS or find a server with a 80 pin SCSI backplane.

Now you can use a program HFS File Explorer which is Free and browse the hard drive and then extract the data out.
