Transferring old HDD to new computer

I've got a 3-year old HDD formatted and operating windows 8 on a computer with a fried motherboard.

I'm building a new computer that will have all new components, including 2 SDD drives, one of which will exclusively host the Windows 10 OS.

I'd like to transfer the old HDD drive to the new one, partly for the extra storage and partly to preserve data as well as continue to use some apps.

Note: I have zero interest in reusing Windows 8; Windows 10 OS will already be up and running on the new computer.

I've read similar questions posed by others before, so here are my more specific questions.

1) is it possible to simply "plug-and-play" the old HDD?

2) If not, is there a way that I will be able to use the apps on the HDD without having to repurchase them?

3) If all I'm able to do is save the data from the old HDD, is there a way to do that without migrating it from my HDD onto my new SDD?

Another question:

Does anyone have any luck in contacting the app manufacturers/licensing folks and getting them to allow you to simply reinstall the apps on the same HDD without charging you anything?

For example, I've got v7 of a document management program (and yes, I do have the serial number) and would be perfectly happy to simply continue to use that, rather than upgrade to v10, which is the current version. Is that realistic to expect them to do that?
