Need help with radiator placement / CPU-cooler / ideal Fractal case /

I am building a new rig with acoustics as priority. This rig will contain water cooled (AIO) GPU's in SLI (2 x EVGA 980ti Hybrid) and a mid tower from Fractal Design (either the Define R5 or Define S).

The setup is pretty simple, but my question regards..

1. Which of the aforementioned Fractal cases is more ideal in terms of the GPU radiators placement?
NOTE! I don't want to use the 3 top fan slots as I want to seal the enclosure from as much sound leakage as possible.

2. If one of the radiators would be ideal to install at the rear 140mm slot of the case, would a Dark Rock 3 / Pro fit as CPU cooler?

3. If neither CPU aircooler fits, should I go with an AIO Liquid cooler for the CPU?
Are there any AIO's that comes to the same level of acoustics / cooling efficiency as the be quiet! or perhaps a Noctua NH-D15. I won't be overclocking CPU for the time being. Perhaps later.

So basically it's either an aircooled or AIO cpu cooler in either Define R5 or S case.
I just want the rig as quiet as possible with good airflow, just not sure with the radiator placement and which of these two cases to go with. Any help / insight appreciated.

Cooling for the AIO GPU's CPU or a copper ait cooler, sound all comes down to the fans, not the cooler and those can be changed. You can have a AIO cooler and loud fans, like my cooler master seidon. Fan's cool like a monster and sound like one too. You can have a $15 air cooler with silent fans. Take the cooler out of the equation an focus on getting quiet fans.

I will not be using stock fans, I forgot to mention that. I have a wide selection of fans which I will be experimenting with, so that's not an issue.

What I was wondering was radiator placement, case selection for my given purpose, and therefor also regarding cpu cooler whether or not aforementioned CPU coolers fit if GPU radiator is installed in the rear. Define S has 3 front fan, 1 bottom. While R5 has 2 front 1 bottom. Define R5 has acoustic sealing in front while Define S has not.

Example. If going with R5, using both floor slots for GPU radiators, 2 front slots as intakes. Would that be an issue? Or 1 radiator in bottom 1 in front. Or perhaps 1 rad in rear, 1 in front/bottom. Or even both GPU rads in the front with push/pull. If going with Define S I have 1 fan extra in the front.

What is the consensus regarding radiator placement. That will help me select the more appropriate case and also ease in which cpu cooler to choose.
