My machine...

5760x1080 (3x 1080p monitors in Surround)
i7-6700K
Gigabyte Gaming 7
16GB G.Skill 3400 Ram
Samsung 950 M.2 SSD

These Cards EVGA GTX780 SC (top 2 slots on MB)

The CPU sits between 3X°C (below) 40 at any given time. Idle ~19°C ish

The video cards hit...

Fallout 4 - 60°C
BF4 - 70-80°C
Starcraft 2 - 60-7X°C

I guess my question should be, is 80 too hot?

Solution
Your cards have a turbo boost temp limit of about 82c. They will adjust their turbo boost clock speeds and fan speeds in order to stay below that target temperature. As long as you stay below that temperature you will have higher turbo boost clocks. Above that temperature you will run at your standard stock clock speed. And as others have mentioned your upper thermal limit where you risk damage to your GPU is about 94c.
