Would overclocking my I7 6700k make a big difference?

I like playing CPU taxing games like KSP and from the depths, building massive complex things that tend to drop my fps to ~10. Would I be able to build far bigger contraptions if I overclock my new I7 6700k to 4.7ghz? also are there any other parts that might affect my ability to super-scale constructions?

That depends on what you think is a big difference. Your CPU already has turbo boost though.
To be fair, you might see a slight FPS increase with a good OC. But I don't think it'll be so much
that you'll notice a real difference. Still, if you do the OC right, it doesn't hurt. Just make sure
you know what you're doing and have a sufficient PSU/motherboard/CPU cooler. It's fun
and you can learn something new. You should, however, list your specs for us to see.

Don't even have the parts yet still being shipped, just pondering whether to OC or not.

I agree with this statement, especially since you went with liquid cooling. Just make sure you are doing it right and get everything stable before you do anything intensive.
