Single High Capacity SSD or 250gb + HDD?

My SSD+HDD burned out so I need to replace it and I'm also getting into video editing, no gaming whatsoever.

Been looking online for deals and I can get a 1tb SSD for $280 or 2tb for $640. I like fast and don't mind these price points, but was curious if I'd notice a performance difference between a single high capacity SSD vs doing the 500gSSD + 2tb HDD. Working with Adobe AE, Premiere & Photoshop.

What would you like to spend and how much storage capacity do you need?
I would probably go with maybe a couple 500gb ssd's, I would raid 0 them just so they would function as one drive and maybe gain a little performance, but at the cost of increased risk of loosing all data. So add in a however large you need spinning drive to back up the ssd's 3tb is about the sweet spot for price now.
Total cost probably $450
