Need input on new Intel Skylake build

I am overhauling my PC and need input on my current build. I mainly need to know if there are any glaring issues with what I have chosen. I am looking at about 500 dollars for the overhaul and own some of the parts already (I made note of which parts below). I use my PC for playing games such as the Witcher 3 and Fallout 4 and want to enjoy 60 frames on high/ultra settings. I also do some video and photo editing in addition to the occasional stream. Here are the specs:

CPU: Intel i5-6600K (with water cooler for OC'ing)
MOBO: ASRock Fatal1ty Z170 Gaming K4
Memory: 16 GB DDR4-2133 Corsair Vengeance
GPU: Sapphire R9 380x Nitro 4 GB GDDR5 (Already own)
PSU: EVGA 850w (already own)
Storage: 120 GB SSD and 1 TB HDD (Already own)
Optical: Asus DRW-24bst
Case:Thermaltake Overseer RX-I Full Tower

Star Citizen and Star Wars Battlefront, both call for 16GB and more are coming, many already push 8GB, so having more will improve the gaming experience by keeping the average frame rates up

16 GB of RAM is an overkill if your PC is for gaming. No games will be using above 8 GB even in the next couple of years.

If you are on 1080P having a R9 390 will help you easily achieve what you are looking for. R9 380X will do nearly the same so i would say you are good to go.

i'd go noctua d15 air cooler for an OC 6600k setup instead of the equivalent priced water coolers. it looks ugly as hell but how often are you going to look at your cooling setup, the d15 is cheaper and cools better than most AIO water coolers.

as noted keep the 16gb ram, and if there's a bottleneck for games at ultra it's of course the 380x, which might be ok right now but you will want to upgrade it in the next 1-2 years if you want to play newer games on ultra (assuming 1080p? 1440p already it will struggle).

I hear you on the 380x Nitro. I just bought it a month ago and the price was right so I went with the 380x instead of the 390 or the Nvidia equivalent. However I was upgrading my card from a Radeon HD 7770 so the GPU is already an enormous improvement for me. The setup I am using now has an A10-6800k OC'ed to 4.9 GHZ so I am experiencing an enormous bottleneck on the current gen games esp. the Witcher 3. I am also running 8 GB of low-end RAM so everything is sluggish and choppy right now.

I plan to keep 1080p and am also willing to play the new AAA titles or GPU intensive games on lower settings (high or medium) if I have to. But I have found the 380x Nitro has kept pace in gaming but my CPU is ruining things for me. Hence my motivation in upgrading to Skylake.
