My main concern is that it may be a little too frankenstieny. I've only built one pc before and it was on a much smaller budget.

1. I already own the CPU cooler, the case, the PSU, and the memory. They're all about three years old. Do I need to replace any of them?

CPU: Intel Xeon E3-1231 V3 3.4GHz Quad-Core Processor
CPU Cooler: Cooler Master Hyper 212 EVO
Motherboard: MSI Z97-GAMING 5 ATX
Memory: G.Skill Ripjaws Z Series 8GB (2 x 4GB) DDR3-2400
Storage: Samsung 850 EVO-Series 250GB 2.5" SSD
GPU: EVGA GeForce GTX 980 Ti 6GB HYBRID Video Card
Case: Corsair 200R ATX Mid Tower
PSU: OCZ ModXStream Pro 700W 80+ Certified Semi-Modular ATX

2. For the GPU, would you recommend the EVGA 980 TI Hybrid or the Classified? If Classified, I see there are three different kinds (2.0+, 2.0+ REF, and 2.0+ w/BP) and I'm not sure the difference on them.

3. Is 8GB of Ram sufficient for high end gaming? Looking to hit games like Overwatch at 144hz. Not sure how Ram plays into any of that.

Solution
1) You don't need to replace anything. You might want to get a liquid cooler though if you want to overclock.
2) Only get the classified if you're going to do some serious overclocking.
3) The RAM's task is to be able to multitask multiple things at once. Only get 16GB of RAM if you're recording you're gameplay.
I hope I answered all your questions :)
