I currenty have a lenovo y510p. It has 16g of ram and it has 2 750m sli GPUs. The model number is 59385820 Well the LCD screen went out and it's on back order. They are offering me a replacement which is a y700. The model number is 80NV0028US. Would the 1 960m provide the same amount of graphics output as the 2 750m? And also would it be worth making the swap or wait till screen comes of backorder?

The 960m would be slightly slower than the two 750m's. However, you would get significantly better performance in games that don't have reasonable Sli support. Really it's up to you and the games you play, I'd personally get the 960m.

I think you'd be overall more happy with the 960m. Newer architecture, runs cooler, higher clock speeds. Plus I'm sure the replacement will come with a more recent CPU as well, which may make up for the slight loss in graphical power.
