Hi, I wanted to know if I could run 2 x 4GB kits of G.Skill Ripjaws V Series memory on a MSI B150 Gaming M3 MB, with an i5 6600K.

Note: I've already purchased the second kit, and want to know whether to install it on my work and gaming PC, or whether to keep it for an upcoming project.

You can try, and if the play it can prove beneficial. However there are no guarantees when mixing sets, even if the same exact model. Give them a try, if they play, all will run in dual channel

Yep.
And for future reference, quad-channel is usually sold as a kit.

Also, 2666MHz CL15/16 seems to be the point of diminishing returns. Anything faster rarely makes any difference.

Use the memory?

It won't help for bandwidth, but it may help your experience. More than 8GB is arguably not a big deal for gaming, but 16GB is often considered the minimum for video editing.
