New gaming rig build....have a few questions

I've decided to finally build myself another computer. It's been a while but my MSI GE60 (got it for college) is starting to fall way too behind.

Here is what I chose so far

CPU: Intel Core i7-6700K
Mobo: depends on what color config I choose for the inside right now
RAM: G.Skill Ripjaws V Series 32GB
GPU: ????
Case: Thermaltake Core X71 or Fractal Design Define S or Corsair 900D
PSU: OCZ 1000w fully modular (from an old gaming rig I had, still under warranty though)
HHD: Seagate Barracuda 3TB x2….maybe
SSD: Crucial MX100 256GB
Disk drive: LG WH14NS40 Blu-Ray/DVD/CD Writer (Yes I do require this….will get an external one if I get the Define S)
Cooling: full water cooling with petg tubing

Anyway that's what I have so far but now for my questions.

1. Should I get the i7 or go for an i5? I know there’s really no difference in them for gaming but the hyperthreading in the i7 will definitely help with working in Solidworks and different Autodesk Suites as well as coding and game development. I currently use my laptop for those which has an i7 4700mq but it'd be nice to have a desktop to work on instead.

2. I know Pascal was just announced yesterday and I don’t know if I should get it. Currently I am in a dorm room and will be for another 2 years so what I game on is a 55in 1080p tv. On the other hand, over long breaks like the Christmas one that’s about 1.5 month, I will take it home and we do have a 4k tv that I can play on. 4k isn’t a must at all but I may get a 1440p monitor just for home for something better than 1080p. So what should I get? I really like the 8gb of vram on both the 1070 and 1080 but are they overkill? In the future I may sli but not now for sure.

3. Does anyone have anything bad to say of OCZ power supplies? I’ve used their SSD’s plenty before and no complaints but I’ve always used corsair psu’s in my build. Using what I have will save a bit of money.

Save money and get the Thermaltake X71. King of value.

Don't get Seagate 3TB, high failure rate.

I'll leave the rest of the questions to others.
