Best Base Build $600-$1000?

Introduction: Hello everyone, I have been wanting a custom PC build for a few years now but never got to it because of college studies. Now I have a little break for a year or two during which I will have more time to play games. I am looking for a build that would be good for that year or two but that which if I wanted to would be easily upgradable to a high-end PC later. I used to be good at picking parts out and things but now I haven't been following the market much at all. This is why I need your help.

I currently have a laptop with i7-4700HQ with 16gb ram and a gtx 860M and I am very happy with the computer because it plays the games I've played a few years ago pretty well and does rendering relatively quickly. When I game, I like to play strategy games like XCOM and Civ, but also enjoy open world games and MMOS. I also want the computer not to struggle with recording my games and rendering to post on youtube.

Approximate Purchase Date: Within a couple of months

Budget Range: $600-$1000

System Usage from Most to Least Important: Gaming, Rendering, University Work

Are you buying a monitor: No

Do you need to buy OS: No

Preferred Website(s) for Parts: Amazon and Newegg, but I wont overlook cheaper prices!

Location: City, State/Region, Country - United States

Parts Preferences: Again cheaper and better are best, but I prefer Intel/Nvidia Systems.

Overclocking: Eventually

SLI/Crossfire: As long as it supports 2 or more monitors its good.

Additional Comments: I am looking for your help with the build because I think the systems I build on PC part picker are overkill and don't give me the best bang for buck. The range is wide because the cheaper the build the better because I don't want to commit to a high-end system because I might not need this system for that long. I guess the main requirement is for it to be upgradable later on. I am not familiar with the CPU sockets now-a-days and which have the best upgradability later on. Also, I would like to be able to support two monitors.

A little over budget, but would do everything you want and be as future proof as possible. Add the $379.00 GTX 1070 when it comes out in a few weeks and you would have a gaming system capable of 4K.
