You can go with a lower end motherboard, but I recommend a higher end power supply and a 240GB SSD. Stock cooler is fine. You don't need 2666 memory, 2133 is the standard.
 
The power supply is poor quality. Z170 board with an I5-6500 is pointless. Here this is better:
