I installed windows on a hard disk on which were present stored data, without formatting the disk and then leaving the data there. I would now like to uninstall / remove windows and installed folders, without formatting the disk as they are always present stored data.

I don't think that you will need to take ownership if you boot Ubuntu. Also, I don't think Ubuntu will have issues with NTFS.

Boot from different windows (installed on different hard drive) or connect drive to another computer with it's own windows.
And delete windows folders from your hard drive (you may need to take ownership of those folders first):

Yes, you can do that from linux too.
But in linux there might be issues with ntfs file system(that windows uses).
