Can I read and copy off files from my 2009 iMac onto my New PC build...I figured as long as I can connect it to one of the hard drive cables it should be able to.

Is this true?

Your only choice is to connect it to your new PC and use software that can access mac partitions.

If you're talking about just the drive, not without software that can read HFS+ drive partitions. Windows can't read HFS+ by itself.
For example:

You can make a USB Ubuntu disk that you can boot the PC into that can read the HFS+ partitions that your mac hard drive uses and copy files to and from your disks.

I'm new to all this. I just did my first build. I just want to get the pictures and videos. I don't want to try any software.

I'm a photographer and filmmaker, I just need regular files like jpegs and mp4 files

Different operating systems use different methods on how they format harddrives so if you have windows now you cannot access the harddrive without software that can actually read it.

No it's not working...I think the motherboard fried or something....I just built a PC for the first time, and getting an understanding of that, but idk about my mac :( I'm barely understanding the PC as you can see
