Hi could someone explain to me how a usb to sata adapter like this works

I always thought SATA and USB use different signaling, thus a PCB bridge circuit board would be needed to translate the signals, like all USB external HDD enclosures use a translation bridge or am I missing something?

could someone please give me a though explanation to me :)

You are not missing anything, there's same type of a translation bridge in that adapter as in an enclosure. It's in no way wire to wire connection. If you use it for 3.5" drive you would need to power it from a 12v adapter.
