So hypothetically a company is going to update/upgrade their network to a virtual network using VMWare as their hypervisor. What sort of issues may occur when deploying this new network?

VMware (and hypervisors in general) are not virtual networks. That company should have already established network infrastructure, numbering plan, etc. Once this is done, hypervisor should be comfigured to "route" these networks to the correct virtual host.
