What's The Best Way To Get The Best Out Of Two Small SSDs In One PC?

After a recent bout of naivety and stupidity I've wound up with two 120gb SSD drives. I'm not sure if it's a better idea to have them as separate volumes on my PC or have them as one volume, as I have been led to believe is possible.

Additionally, I want to swap out my old HDD and make (at least one of) the new SSDs a boot drive.

120GB as a C: drive is fine. You do need to keep an eye on free space, system restore wants to take up all the space, but it shouldn't be an issue.
Then use the other SSD as D: and your HDD as E: with shortcuts, you only have to think about what volume something is on during install or upgrades.
