Not sure I understand the Mini-ATX board in the standard ATX Mid Tower.

I would probably opt for an M.2 compatible motherboard and an M.2 SSD.

There are better/cheaper and smaller power supplies that could power a single GTX1080. With that motherboard there isn't a possibility for a second.

There are nicer looking CPU coolers, though that one would work fine.

I would probably just go ahead and get Windows 10 so that you don'[t have to install Windows twice.

Solution
Additional fans are not needed until you want to run SLI. PSU sized for GTX 1080 SLI if needed / desired down the road.

It is an ITX motherboard with only 2 memory slots and one 16x PCIe slot. ...going into a mid sized case. Might as well go with a micro board or even a full sized ATX with that sized case. If you like the ITX motherboard, look toward ITX cases that fit long GPUs like the GTX 980 (1080). There are plenty out there...

Here are some coolers that are better than the H5:

The 850 EVO M.2 costs more than the SATA model, but it performs the exact same.
