Hello, I've been doing some local scrapyard digging in my town, and have come across some PC components which I think will be good for a video editing workstation PC. That's a great deal. I don't think you are going to find a i7 anywhere, but if you can that would be great. If you are editing and gaming you may want to go with a better GPU. Other then that you are getting a deal of a life time!
if you can pick up a 650w power supply the old one is good unit. but if you want to add a higher power gpu latter on you wont have to swap out power supply. on the gpu i would wait for the newer pascal 1050 that are dropping later on this year there be faster for a little bit more money.

That looks ok, but if I were getting a workstation type motherboard that supported ECC RAM and a Xeon that supported it I'd utilize it. I have a similar motherboard (Asus P7F7-E WS) and outfitted it with 16GB DDR3 ECC server RAM that I picked up on eBay cheap.

Beyond that - you should be ok.
