For the moment, the GTX 1080 is the better card for gaming, but, depends, which is your system? what resolution do you want to play?
I mean, its a huge mistake buy a GTX 1080 if you're playing @ 1333x768.

Im going to game @ 1920x1080p on a 55 inch TV (Samsung). Using CPU intense software(Zbrush, Substance painter and Photoshop). So the GPU i need is needed for rendering and gaming! so far these are my parts.

It depends on what you are doing ... a rendering workstation will require a different card than a gaming box.
The top card will be the 1080 Ti... but that won't b e released till Xmas season at best. The 1080 is the fastest card now, but the 1070 is expected to eb right on its heels. The 980 was 14% faster than the 970 and cost twice as much. Therefore two 970s in SLI brought more performance per dollar to the table than the single 980.
Here's how they stacked up relatively in average fps per dollar
970 - 3.97
970 SLI - 3.48
980 - 2.97
980 SLI - 2.60
980 Ti - 2.53
980 Ti SLI - 2.21
