Opening programs is only a disk-read process.
Copying files & creating/saving files are disk-read/disk-write processes.
So if opening programs is only a disk-read process, will opening programs daily multiple times impact my ssd's life span majorly? I also want this ssd to last as long as possible.
Don't worry about things like that, it's like people I see that try to drive around every dip and bump in the road. Just use it, the lifespan it has is more then long enough to run your computer till probably something else fails. I have used SSD drives that are over 5 years old by now with no issues.
Any time you do anything on the drive, it will get used. Opening a program, closing a program, etc.. do you watch streaming videos or play games? That uses the drive about a few 100 times more than opening and closing a program.
