Will it provide a gaming performance increase? Most certainly. It will also give you access to the new technology associated with the new cards (Ansel, VRworks etc).

Is it worth it? Well, thats down to you. If you have the amount of spare cash lying around to blow on SLI1080s, then sure why not, but if your blowing your life savings, then no. Only you can answer that one.
 
1080 is about 30% faster than a single GTX980Ti.
GTX980Ti is still noticeably faster than a single GTX1080. Well, SLI with all it's potential issues and that not all games support.
2x GTX1080s on SLI to replace your 2x GTX980Tis? If you have money, why not.
Is this worth it? Only you can answer.

BTW, I will be replacing my 2x GTX970s for a single GTX1070 or GTX1080 or anything from AMD (if any) late this year..

not really worth it unless you have alot of money a 1080 sli is faster but then one day the 1080 ti will be even faster
