I'm not too tech savvy. I tried to do the research on my own but I couldn't piece together the answer. So, I figured i'd come to you guys for help.

I'm currently running an i7 980X Extreme (not OC'd at this time) on the Asus P6X58DE.

Do you guys think my older CPU will bog down my nice new GTX 1080?

If so, how extensive will it be? Bad enough I need to replace the CPU asap?

No, I do not really foresee a major bottleneck in that equation. Yes, it's an older CPU, but it's still fairly capable. In fact, it does better than AMDs most popular FX chip in a lot of titles, and I'd have no worries pairing THAT with that GPU card, even though it will perform substantially worse than a Haswell or Skylake system. It's still more than capable enough for most games. If you're looking to get the most out of that card though, then you might want to consider a newer platform.
