Just wanting to get some feedback on my current build plan. I am looking for more technical feedback as it has been almost 7 years since my last build and technology has come a long way.

CPU: Intel Core i7-6700K
Motherboard: GIGABYTE GA-Z170X-UD5
RAM: CORSAIR Dominator Platinum DDR4 2800 16GB
Boot Drive: 2X SAMSUNG 850 PRO 2.5" 512GB SATA III
Storage Drive: Western Digital 2TB
Video: 2X GIGABYTE Radeon R9 Fury X
PSU: CORSAIR AXi Series AX1200i Digital 1200W
Cooling: Custom water cooling loop for CPU and Video
Case: Thermaltake Core P5

OK, so a few bits of advice.

For the GPU, it's really just better to go for a single GTX 1080 for the moment, and ideally overclock it. It's much more powerful, and with the issues that multi-card configurations suffer from it's just not worth it going for two at the moment.

You can downgrade the PSU to a good 850W. Even if you decide to get two cards after all it will be plenty of power.

I'm not really sure what your thinking is behind the SSD configuration, but if you're going for speed then a 950 Pro would be a better choice, and if you're going for capacity you can just as well go for a 1TB 850 Evo.

I would go for the GTX 1080 but sadly no one around me has any in stock along with a very a long waiting list what are your thoughts on the 980ti? I already own the 1200w PSU and the two 850 PRO's which I was going to throw into RAID 0, just trying to save a bit of cash.

Looks fine.
I'd pick 1TB M.2 SSD (PCIe version with speed over 500MB/s) over two sata drives. Also the PSU is a bit overkill. And i personally don't like the multi card setups.
Also, are you planning two loops or one loop ?
