Xeons arent built for gaming. Youll get less fps than you do with i7s. Grab the i7-6950X and a X99 motherboard with 32gb or DDR4 RAM. Thats pretty much golden for rendering and gaming. Its the perfect balance between both
More cores is better for rendering so if thats all you did then grab a xeon. But since you want to game at max settings youll want the 6950X which has the best of both worlds. Also gaming with max settings, you need to have a GPU that can handle those settings.

Whats your budget? There are 22 core Xeons out but they cost $4500 each. The new 6950x Has 10 cores but costs $1500. Theres a 5820K which has 6 cores and costs $400. If you do alot of video editing then the 6700k is fine. If you do rendering of the videos after you edit them then Xeons will be the best as they have higher cache and more cores.

Well to get a better processor then that you would need to change the motherboard.

i7-6950X would be the most cores (10) at the highest clock speed. If you need more cores, Intel offers several Xeon models, some with up to 22 cores if I recall correctly.

Depends on what you are truly after, and how much you have to spend. High core count Xeons are upwards of $4000 and aren't usually available outside the US for a few years.
