I want to upgrade to a larger, faster SSD... which to get?

Right now I had the Intel SSD 520 180GB drive. It's read/write times are very fast.

I do a lot of photo editing; the photos are downloaded to my 2TB HDD and editing on them. However, my editing software is on the SSD. The performance is decent but could be better. I'd like to move my batches of photos that need to be edited to the SSD for faster (hopefully) write speeds but I need more space.

Edit: I have the ASRock Z97 Extreme6 Mobo

I'm looking at these two drives, I've read reviews on each and have also read conflicting opinions. I'm hoping to get a better view of your opinions. I'm looking for consistent speed. I've only used Intel SSD drives.

Yes, they are that fast - I have one in macbook pro :) And that's why they might be worth the premium of you are working a lot with storage.
And yes you can use it for OS as well. Actually you should use it for OS ;) You can even transfer your existing installation to the new drive.
