I'm interested in buying the HTC Vive or Oculus Rift in the near future, however my PC is in need of a pick me up.

It currently has:

CPU: Intel(R) Core(TM) i5 2500 Quad Core 3.3GHz 6MB cache LGA1155
GPU: NVIDIA GeForce GTX 560 Ti 1GB 16X PCIe
MOBO: Asus P8H67-M LX SI H67 DDR3 Intel LGA1155 micro ATX Mainboard w/ 7.1 HD Audio, GbLAN, Intel HD onboard Graphic, SATAIII USB2.0 (B3 Stepping)
RAM: HyperX FURY Series 16GB (2x 8GB) DDR3 1600MHz CL10 DIMM Memory
HDD: Samsung 850 EVO 250 GB 2.5 inch Solid State Drive

The HTC Vive checker tool states my GPU needs upgrading, however the Oculus Rift suggests I update both my CPU and GPU.

I am considering the NVIDIA GTX 1070 as the primary upgrade, but I was wondering whether I could get away with my current CPU?

I've seen the latest range of Intel processors exceed the specifications listed for VR, however based on my current components I would need to upgrade my motherboard and RAM (To support the new processor and then support DDR4).

If you're not gonna buy VR now, than don't bother to upgrade. You...
Well, do you want an OR or Vive?

For the full Rift experience, we recommend the following system:
Video Card: NVIDIA GTX 970 / AMD 290 equivalent or greater
CPU: Intel i5-4590 equivalent or greater
Memory: 8GB+ RAM
Video Output: Compatible HDMI 1.3 video output
USB Ports: 3x USB 3.0 ports plus 1x USB 2.0 port
OS Windows: 7 SP1 64 bit or newer

It'd be a safe bet to say both as I am not sure which one to go for at the moment.

I know there's a minimum recommended spec but I don't want to have to go through this process in half a years time as the VR games evolve.

Would it be safer just to take the leap now and go for a Skylake CPU with the necessary gubbins?

If you're not gonna buy VR now, than don't bother to upgrade. You have to pick one or the other (or both, then you just go for the highest spec anyways). Either later on the requirements are gonna increase as VR games get better looking and/or have more stuff going on in them. Currently they're all extremely simple games.

I'd say, put any money you're planning to spend aside until you're actually ready to spend it, as hardware will improve over time.

Your current CPU might be okay, but your GPU definitely isn't. You could upgrade just to the best DDR3 system and not have to buy new ram, but that would really only save you maybe $70-80 dollars.
