The msi z170 gaming m7 is the better choice here.
Really dont know about the memory, but it seems good enough (on paper at least).
EDIT: For memory, I would suggest the Corsair Vengeance LPX 16GB (2 x 8GB) DDR4-2666, make sure to get the kit with 15-15-15 timings.

Thats true.
Although the 750W unit will give him the option to add another 1080 in the future, if for some reason a single card isnt enough.

If your running a 2K or less monitor by the time you need a new card your better off buying the latest tech than adding a old card in SLI. If he/she is going to be using a 4K monitor then yes adding another 1080 in the very near future would be a good choice.
