Hi guys,

I enabled XMP in bios UEFI asus z170 pro gaming, my ram sticks are G skill 8x2gb 3000mhz.

I checked CPU-Z and Speccy if they would really run at 3000mhz but they don't. They just run at 1500 mhz instead.

Before i enabled XMP they ran at 1000mhz..

What did I do wrong?

Nothing. The RAM is DDR = double data rate. CPU-Z reads the actual speed. You double that for the effective speed. So 1500 x 2 = 3000. RAM is sold marketed at its effective speed. Your memory is fine.
