Is a 480gb ssd enough space for a budget gaming pc?

Solution
Depends entirely on how many and how large your games are.
OS and a bunch of applications (Skype, Spotify, etc, etc) will all fit within 100GB easily.

Will your chosen games fit within 300GB or so?

I'd say it is. My primary PC these days has a 400GB hard drive and I haven't run out of space yet. I have 104 games installed currently, but quite a few aren't very big (most of that number are indie games) plus a bunch of other crap and I still have nearly 50GB of space available. The SP550 is a solid SSD as well, especially for that price. Buy it!

I think I could fit my games in. I'll have to be conservative though, probably. I plan to get games like Overwatch, Battlefield 1 (when it comes out), GTA 5, CS:GO, etc. If I do run out of space, I could buy another one and put both of the ssds in RAID 0.

No, do NOT put another drive in a RAID 0 with this one.
Very counterproductive, and you can have another drive just be another drive letter.
