Greetings all....

Currently I have a GeForce GTX 780 FTW edition 3GB.... roughly how much of a performance increase will I see if I upgrade to a EVGA GeForce GTX 980 Ti Super Clocked Gaming ACX 2.0 6GB? Amazon has them for about $500 (is this a good price?!) now, so I was wondering if it would be a worthwhile upgrade. Right now, with the 780, I get about on avg 35-45 FPS in WoW maxed out with AA on, and about 60 FPS in Steam/Fallout 4 maxed as well. I'd like to see those numbers increase obviously.

Current system specs:
Asrock Z77 Extreme 4 Mobo
Intel i7-3770 CPU
GeForce GTX 780 FTW
16 GB Corsair RAM
750 W Corsair PS
Ben-Q 144Hz 1ms gaming monitor

Thanks in advance for the advice all!

If you've got $500 to splurge on a new GPU I would definitely advise you to save up another $100 and get a new GTX 1080 ($600 MSRP). The prices are a little high right now, hovering around $650 due to limited supply. In 2-3 months the prices will come down and that gives you time to save up the other $100.

A GTX1080 will blow a 980Ti away...

The 780 is on its way out in terms of keeping up with newer games, quite honestly. I would not recommend stepping up to anything less than a 980Ti right now, which the price drops on them are currently happening rapidly. It'll suit you for the next few years as the 1080 drops, if you don't want to plunk down the funds for it right now.

Also, I'm not sure if that processor would bottleneck the 1080 anyway.

Either way, you will see a dramatic performance increase if you go with the 980Ti. Check out some benchmarks for the 980Ti and you will definitely see a comparison with the 780.
